Susie and Richard Charles weren't the only people to be tired of tasteless poultry. Since they started rearing turkeys on their farm near Lancaster in 1997, they've found a like-minded clientele hungry for free-range guinea fowl, chickens, and geese. The Poulet de Bresse chickens are so good that chefs as far afield as Michel Roux Jnr at Le Gavroche in London request them. Call ahead to avoid disappointment, as new batches of birds are only available fortnightly.
